It seems like ages ago that Liebling and I literally made a run for the border and found ourselves in Copan, Honduras, site of ancient Mayan ruins that date back to the 8th century. I wrote about our fateful ride there in this post, where I spent the 6-hour ride in a cramped minivan beside a very cranky Englishwoman. Never one to let anyone rain on my parade, all was soon forgotten when we reached our destination and beheld the ancient site in all its glory. I’m not a big fan of ruins, but must admit that I enjoyed our two-day detour to Honduras all the same. Admittedly, there is not much to do in Copan apart from seeing the ruins. It is a dusty town, with run-down infrastructure that has seen better days. We were also swindled by a tour agent- our “high-end” hotel, that we paid a pretty penny for, was anything but- we’d been had, plain and simple. Still, it’s all about the experience, and I can’t say that I regret this one. Liebling and I also had the best meals of our trip while in Honduras, so I can’t complain about that!

Oneika, you take such beautiful pictures! Maybe too beautiful because your food pictures have my mouth watering…what exactly were you and your Love dining on?!? And can you share the name of the restaurant, just in case I'm in the area? LOL
The colors of that bird are amazing. Reading your recent posts you have inspired me to become more serious in learning to speak Spanish. I have lots of native speakers as patients and the limited communication bothers me. Thanks for sharing your travels.

@ElleX: Thank you! In the first picture we ate what they call an empanada in Honduras, though to be honest, the empanadas I've had in Argentina don't really look like this! It was filled with beans and cheese. The second pic is a roast chicken dish that was hands down the BEST meal I've had on this trip (or in a long time). I don't remember the restaurant but it was listed in the Lonely Planet so I'll look it up and come back and tell you!
@Anna.Kathryn Vaughan: I have two doctor friends in NYC who have also lamented not being able to communicate well with some patients due to not speaking Spanish. It is such a beautiful language and Guatemala is a great (and cheap!) place to learn!
@Emily: I'm looking forward to some Chilean fare next week!!! Can't wait! I was disappointed in the hotel, but in the grand scheme of things, it wasn't so so bad. 🙂
@Terri: We had a lot of empanadas and grilled meats (Liebling gorged himself on steak). Everything was well seasoned and tasted so fresh! I was very impressed. And oh! The bathroom was definitely not up to snuff. Very disappointing!
@Tanya: We really lucked out- because it's low season, a lot of the sites we checked out were basically devoid of tourists! Sorry about the food pics.. I didn't mean any harm… 😉

I'm sorry to hear you were swindled. Glad you didn't let it get you down, but still, I always hate when things like that happened. It can sour a part of your feelings toward the city.

@Kyle: You're right, the ruins were really well preserved, considering how old they are! They do a lot of conservation work on them though, there was a whole section that was blocked off for reconstruction/preservation…
I like some ruins more than others. For example, the Acropolis in Athens was just a big ole heap of dusty rocks, IMO, but I'm all over the ruins in Rome. BTW, reading your posts always makes me hungry. 🙂
